Ingredients: 2
cups
shredded zucchini 2
tablespoons
butter 1
pound
Italian sausage,
browned & drained
1
cup
Swiss cheese,
diced
1/4
cup
parmesan cheese 5
eggs 1
cup
heavy cream
salt
pepper
Directions:
Saute zucchini in butter for 5 minutes. Put zucchini in bottom of buttered pie plate. Top the zucchini with the Italian sausage and Swiss cheese. Beat together the eggs, heavy cream and parmesan cheese. Add salt and pepper to taste. Pour egg mixture over sausage. Bake at 450 for 15 minutes. Turn temp. down to 350 and bake for additional 20 minutes or until lightly brown and set.
