White Chocolate Mousse Cheesecake With Sun-dried Cherries

White chocolate 3
teaspoons
Gelatin powder 1
quart
Whipping cream 8
ounces
Sugar 2

Cream cheese 4
ounces
Caramel DeLites Cookies,
diced and crumbled

ounces
Shortbread Cookies,
diced and crumbled
4
ounces
Praline Royale Cookies,
diced and crumbled
6
ounces
Dried cherries 1
ounce
Melted butter
Directions: 1.
Melt chocolate. Dissolve gelatin with 1 ounce of water. Place cream cheese and sugar in mixing bowl. Use medium speed for 10 minutes. When mixture is soft and creamy add melted white chocolate and gelatin. Mix for two minutes. Add whipped cream and sundried cherries.

To assemble: Grease a 10-inch mold with butter and cover sides with the Shortbread crumbles. Pour Caramel DeLite crumbles on bottom, then pour the cheesecake mixture over the first layer of cookies.. On top of that pour the Praline Royale mixture. Alternate the cheese and cookie layers.
Someone asked me about where to buy Praline Royale Cookies. Good question. I went to the Girls Scout's Web site (http://www.girlscouts.org/) as well as the two official bakers, ABC/Interbake Foods (http://www.girlscoutcookiesabc.com/) and Little Brownie Bakers (http://www.littlebrowniebakers.com/). There's no mention of Praline Royale so my guess is that it's a discontinued flavor. I'm not up with all the cookies at the grocery store, but I suspect that there's a praline type cookie out there among all the other cookies that you can use instead. Flora
