Twocrust Slice O' Lemon Pie

Ingredients:
Double crust pastry
-----FILLING----- 1 1/4
c
Sugar 2
Flour 1/8
ts
Salt 1/2
c
Water 1/4
c
Melted butter or margarine 3
Eggs 1
t
Grated lemon peel 1
Lemon,
peeled and sliced
-thin
Directions:
In small mixing bowl, combine all filling ingredients except peeled
lemon slices. Mix until well blended. Stir in lemon slices. Pour into
pastry lined 8" pie pan. Roll out remaining dough. Cut slits for
steam to escape; moisten rim of bottom crust. Place top crust over
filling. Fold edge under bottom crust, pressing to seal. Flute edge.
Bake at 400(deg) for 30-35 min. until golden brown Chill before

This came out of a little cookbook called: Cooking of the West:
recipes and remedies at least 100 years old.
"We have been informed that the best baking powder is made of
bicarbonate of soda and pure cream of tartar -- one small teaspoon of
soda (to) three cream of tartar. The above quantity is enough for
one quart of flour. It is best to sift the cream of tartar with the
flour, in order to have it thoroughly mixed before adding anything
else. Dissolve the soda in a little boiling water and add it in the
last thing."

Mark, this is an old family recipe. Can't remember how much it
makes, but enough to last our family a year. (I'd guess 8-12 pints)
