Thai Chicken Fettucine Salad

Ingredients: 1
cup
picante sauce 1/4
cup
chunky peanut butter 2
tablespoons
honey 2
tablespoons
orange juice 1
teaspoon
soy sauce 1/2
teaspoon
ground ginger 6
ounces
fettucine,
cooked
3
chicken breasts,
cut in 1" cubes

tablespoons
vegetable oil 1/4
cup
cilantro,
optional
1/4
cup
peanuts,
halves
1/4
cup
red bell pepper,
thinly sliced
green onions,
sliced
Directions: 1.
Combine picante sauce, peanut butter, honey, orange juice, soy sauce and ginger in small saucepan. Cook and stir over low heat until blended and smooth. Reserve 1/4 cup picante sauce mixture. Toss remaining picante sauce mixture with hot, cooked fettucine.

Cook chicken in oil in large skillet until browned and cooked through about 5 minutes.

Add rest of picante sauce mixture. Cool to room temperature before serving. Serve with additional sauce. Garnish with cilantro, onions, peanuts, red bell pepper.
