Sugar-ginger Bars

Ingredients: 1 1/4

C and H Granulated Sugar,
- (divided)

cup
Butter or margarine 2
Eggs 1 1/2
cups
All-purpose flour 1/4
teaspoon
Baking soda 1/4
teaspoon
Salt 2
teaspoons
Ginger 2
tablespoons
Buttermilk
Directions:
Cream together 1 cup sugar and butter. Add eggs one at a time, beating well after each addition. Combine flour, soda, salt and ginger. Stir in dry ingredients and then buttermilk. Spread in greased 15 x 10-inch pan.
Sprinkle batter with remaining 1/4 cup sugar. Bake in 400 degree oven 20 minutes. Cool and cut into 64 bar cookies (1 x 2 inches).
