Refrigerator Pineapple Cheesecake

Ingredients: 1

graham cracker crumbs 2
tablespoons
polyunsaturated margarine,
melted

tablespoon
high polyunsaturated oil 3
ounces
lemon flavored gelatin 1
cup
boiling water 1 1/2
pounds
1% lowfat cottage cheese 1/4
cup
sugar 8 1/2
ounces
canned crushed pineapple in juice,
undrained
1
tablespoon
water 2
teaspoons
cornstarch
Directions:
Mix crumbs, margarine, and oil; press into bottom of 8-inch springform pan and chill. Dissolve gelatin in boiling water and cool 'til lukewarm. Mix cheese and sugar in blender. Slowly add gelatin and blend well. Pour cheese mixture into crust and chill until firm. Put pineapple, pineapple juice, water and cornstarch in saucepan and bring to a boil, stirring constantly. Cool 15 minutes. Spread over cheesecake and chill 1 hour or more.
