peanut oil 1

beef chuck,
minced or ground

cup
onion,
chopped

bell pepper,
chopped

cloves
garlic,
minced

chili powder 1/2

dried oregano,
crushed

teaspoon
paprika 1/2
teaspoon
ground cumin 1/4
teaspoon
cayenne pepper 1/2
cup
tomato puree,
use Contadina
1/2
cup
beef broth 1
tablespoon
masa harina,
optional

tablespoons
grated cheddar cheese
Directions:
Heat oil in a large skillet over medium-high heat. Add the beef and brown it, then add the onion, bell pepper, garlic, and all the seasonings. Stir and cook until well mixed and the onions are limp. Transfer to a covered saucepan and add tomato puree and broth. Cover and simmer for an hour, adding a little water if it becomes dry. The chili should be thick and soupy. Add masa and simmer for 10 more minutes. Service in bowls, sprinkled with cheese.
