Pumpkin Pie and Pie Crust (vegan)

Ingredients:

Whole wheat pastry flour 1

Unbleached white flour 7

To 7 1/2 tbs soy
Margarine, cut into bits 1/2
ts
Grated nutmeg
Dash salt (optional) 6

Ice water

Powdered ginger 1/2
ts

ts

Unbaked Sweet Crust
Directions:
SWEET CRUST (this is for double crust, so just make half for the
pumpkin pie):
1 c. whole wheat pastry flour 1 cup unbleached white flour 7-7 1/2
tbs soy X margarine, cut into bits 1/2 tsp grated nutmeg X dash salt
(optional) 6 tbs ice water Place all but water in food processor and
process 10 seconds to cornmeal texture. With processor running, add 3
tbs water. Add remaining water slowly, and stop the machine as soon
as dough begins to form a ball. Tiny pieces of margarine should be
visible in the dough. Form dough into 2 balls (or one if making
single crust) and flatten one into a thick disk. Flour your work
surface and rolling pin, roll dough from center out to sides, turning
into a perfect circle about 10" in diameter. Place rolling pin in
center of dough. Fold half over the pin and transfer to a 9" pie
plate. Decorate edge and cover with slightly damp kitchen towel and
place in refrigerator.
HOLIDAY PUMPKIN PIE:
3/4 lb. firm tofu 2 cups cooked or baked pureed pumpkin 3/4 cup Fruit
Source, or 2/3 cup honey or maple syrup 1/3 cup oil (1/4 if you use
liquid sweetener) 2 tbs sorghum or cane molasses 1 tsp vanilla
extract 1 1/2 tsp ground cinnamon 3/4 tsp grated nutmeg 3/4 tsp
powdered ginger 1/2 tsp mace 1/4 tsp sea salt 1 unbaked Sweet Crust
Preheat oven to 350F. Blend all filling ingredients until smooth and
creamy in blender or food processor. Pour into pie shell and bake 1
hr. Chill and serve.
