Pineapple cut into chunks 1

Water 1
Capful vanilla extract

Salt 1

Diet cream or lemon soda 1 1/3
c
Ricotta cheese 2

Gelatin
Artificial sweetener that
Equals 6 tb of sugar
OR to taste

Toasted white bread

Cinnamon

Granulated artificial
Sweetener to taste
Directions:
Boil the pineapple and water for 20 minutes. In a bowl mix soda and
gelatin. To this add the cooked pineapple and chill until syrupy.
Put this in blender and blend. Add vanilla and ricotta cheese and
blend. Place in pie pan and refrigerate. Serves 2 for lunch. Count
fruit.
If desired. Toast two slices white bread and put in blender and add
cinnamon and granulated artificial sweetener to taste. Blend and
sprinkle over pineapple cheese mixture before refrigerating. Count
the bread.
