Old-fashioned Jam Cake

Ingredients: 3/4
cup
sweet cream butter,
softened

cup
sugar 4
Eggs 1
cup
peach jam 1
teaspoon
lemon extract 2 1/2
cups
unsifted all-purpose flour 1
teaspoon
soda 1
teaspoon
cinnamon 1/2
teaspoon
baking powder 1/2
teaspoon
allspice 1
cup
buttermilk 1
cup
currants,
dredged in flour
Directions:
Preheat oven to 350 degrees.
Grease three 8" round cake pans.
In large mixer bowl cream butter and sugar until light and fluffy.
Add eggs, one at a time, beating well after each addition.
` Blend in jam and lemon extract.
Mix together flour, soda, cinnamon, baking powder and allspice. Add dry ingredients alternately with buttermilk. Fold in currants.
Turn into pans.
Bake at 350 degrees for 25 to 30 minutes until toothpick inserted in center comes out clean.
Cool 5 minutes; remove from pan. Cool completely.
Spread Cream Cheese Butter Icing between layers and on top of cake. (See recipe.)
