Cups
Water 2
Cups
Sugar 1
Lg Handful
Mint Leaves 2
Cups
Lemon Juice
Grated Rind Of 1/2 Lemon 2
Drops
Green Food Coloring
Mint Sprigs,
for garnish
Directions:
In saucepan boil water, sugar and mint for 5 minutes. Cool. Strain,
then combine with lemon juice and rind. Add coloring. Freeze in an
ice cream maker according to directions or pour into several
undivided ice trays. Cover with plastic wrap and freeze until almost
firm. Beat with the metal blade of a food processor or elecric hand
mixer until light and fluffy, the return beaten mixture to ice trays and
freeze until firm.
Serves 4.
