Envelope
Gelatin 2/3
Cup
Sugar 2
Cups
Cold Water 3/4
Cup
Fresh Lime Juice 1/3
Cup
Tequila 3
Tablespoons
Triple Sec,
(or orange liqueur)
Directions:
In saucepan mix gelatin with sugar; blend in 1 cup of the water. Let
stand 1 minute. Stir over low heat till gelatin completely dissolves.*
Stir in remaining water, other ingredients. Freeze in 9" pan till firm,
about 5 hours. In food processor, in 2 batches, process mixture until
smooth. Freeze in pan till firm, about 2 hours. Rim glasses with sugar.
YIELD: 8 servings.
* MOCKARITA SORBET: AT this point, add 1/2 cup lime juice, 1/4 cup lemon
juice, 1/2 tsp. grated lime peel (optional). 1 cup water. Freeze in 9"
pan 1 1/2 hours till crystals form 1/2" around sides. Stir to center;
repeat freezing and stirring. Freeze until firm.
