Kentucky Mint Julep Strawberry Chiffon Pie

Ingredients:

fresh strawberries 1 1/2

unflavored gelatin 1/4
c
cold water 1 1/2
c
sugar 1 1/2
c
water 1/2
t
mint extract 1/8
t
salt 1
baked 9-inch pie shell 1
c
heavy cream,
whipped

Directions:
Wash, hull, and drain strawberries. Sprinkle gelatin in 1/4 cup
cold water. Combine sugar and 1 1/2 cups water, mint extract, and salt.
Bring mixture to a boil and simmer for 10 minutes. Add gelatin and
stir until dissolved. Pour hot syrup over 2 1/2 cups of the
strawberries, stirring gently so they will hold shape. Cool mixture
until it begins to thicken; then pour into cooled pie shell. Chill until
filling is firm; then cover with whipped cream. Garnish top with the
remaining 1/2 cup strawberries and the mint leaves. Serve pie very cold.
