Ingredients: 1
cup
sugar 3
tablespoons
cornstarch 3/4
cup
lemon-lime soda 2
tablespoons
peach schnapps 2
large
peaches,
peeled and sliced
2
teaspoons
lemon juice 1
pie crust (9 inch),
baked
sweetened whipped cream
Directions:
Combine sugar and cornstarch in saucepan, stirring well. Gradually stir in soda. Cook over medium heat, stirring constantly, until thickened and clear. Remove from heat and stir in schnapps. Cool slightly. Toss peaches and lemon juice. Spoon into pie shell. Pour soda mixture carefully over peaches. Chill for several hours. Spoon or pipe whipped cream around outer edge of pie just before serving.
