cream cheese (8oz)
Directions:
Mash enough strawberries to measure 1 cup. Mix sugar and cornstarch in
2 quart saucepan. Stir in water and mashed strawberries gradually. Cook
over medium heat, stirring constantly, until mixture thickens. Add
gelatin. Boil and stir 1 minute; cool. Beat cream cheese until smooth.
You may add a little sugar to sweeten or use less cream cheese. Fill
baked pie shell with whole fresh strawberrries; pour cooked strawberry
mixture over top. Refrigerate until set, 2 hr. Variations; Substitute
raspberries or peaches for strawberries.
