Fresh Orange-pineapple-coconut "cream" Pie

unsweetened pineapple juice

not fresh or frozen

low-fat cottage cheese

coconut flavoring (optional) 1

orange peel,
grated
from orange 1

instant vanilla pudding mix

unsweetened dried coconut
shredded
Directions:
Peel the orange and cut into chunks. Pick out seeds, if any, with the
top of a sharp knife as you slice the orange. Arrange the orange chunks
in a single layer in the bottom of the pie shell. Set aside.
Meanwhile, put 1/4 cup cold water in the blender container and
sprinkle on the gelatin. Wait 1 minute, until softened. Then add boiling
water; cover and blend on high speed until gelatin dissolves (scrape
blender jar). Add remaining 3/4 cup cold water, the pineapple juice, and
cottage cheese; cover and blend smooth. Add coconut flavoring, if
desired, grated orange peel, and pudding mix; cover and blend smooth.
Mound mixture over orange chunks in pie shell. Sprinkle the top lightly
with shredded coconut. Chill several hours until set.
