Fettuccine with Butter and Cheese

Ingredients: 6
quarts
water 2
tablespoons
salt 1 1/4
pounds
fresh pasta,
fettuccine or tagliatelle
8
tablespoons
unsalted butter,
softened
1 1/2
cups
grated parmesan cheese
salt,
to taste
black pepper,
to taste
Directions: 1.
Bring to a roiling boil in a large pot 6 quarts of water and 2 tablespoons of salt.

Add pasta until tender but firm.
3.
Drain and toss hot pasta with butter or olive oil and Parmesan cheese.
4.
Season with salt and black pepper. Serve immediately.
Makes 4 main course servings or 8 first-course servings.
Use freshly grated Parmigiano-Reggiano for the best flavor.
If you can't find fresh pasta, you can use one pound of dried pasta. Instead of butter, you can use 1/3 cup extra-virgin olive oil.
