Directions: 1.
In a medium saucepan, combine the 3/4 cup sugar, the cornstarch and cinnamon; stir in water. Cook and stir till thickened and bubbly. Add peaches; return to boiling. Reduce heat and cook for 2 mins more. Keep warm over very low heat.
2.
In a medium bowl, combine flour and 1 tsp sugar. Cut in shortening till mixture resembles coarse crumbs. Add buttermilk and stir till just moistened. Turn out onto a lightly floured surface. Knead dough gently for 10 to 12 strokes. Roll into a 9 x 6-inch rectangle.
3.
Combine butter and brown sugar. Spread over dough to within 1/2 inch of the edge. Sprinkle pecans evenly over all. Roll up dough jelly-roll style, starting with short side. Cut cross-wise into six 1-inch pieces.
4.
Pour hot peach mixture into an 8 x 8 x 2-inch (2-qt square) baking dish. Place pecan rolls on top. Bake in a 400 F oven for about 25 mins or till golden brown. Cool for about 30 mins and serve warm, with a scoop of ice cream, if you like.
If you don't have self-rising flour, substitute 1 cup all-purpose flour, 1 tsp baking powder, 1/2 tsp salt and 1/4 tsp baking soda.
The second winning recipe from Darlene Smith of Rockford, Illinois. Sweet swirls of pecan-studded biscuits top sliced peaches for a new twist on a seasonal favorite.
