Ingredients: 1/3

fresh lemon juice 1

plum tomatoes,
cut into 1/3-inch dice (4 cups)

cucumber,
English, cut into 1/3-inch dice (2 1/2 cups)

finely chopped fresh parsley 1/4

finely chopped onion,
(preferably sweet onion such as Vidalia or Walla Walla)
Directions:
Whisk together oil, lemon juice, vinegar, salt, cumin, and pepper in a medium bowl. Add tomatoes, cucumber, parsley, and onion and stir to combine. Let stand at room temperature 10 minutes before serving.
