RAZZ KAMNITZER CREAM CHEESE PIE WITH RASPBERRIES, KIWIS, AND PECANS
Combine 3/4 cup of sugar, 1/2 stick of butter, 1/3 box of crackers, and
the juice of 1/2 lime in a blender and puree to make a "dough". Press into
a pie crust and bake for 3 minutes. Place cream cheese in mixing bowl
and whip to lighten. Add 1/2 cup sugar and the juice of 1/2 lime as it
whips. Place 1/2 pint of raspberries in a small saucepan, adding the
juice of 1/2 lime and 1 cup sugar, and heat. Place in a blender and puree.
Strain through a sieve. Toast crust lightly. Separate egg, toss pecans
and 1/2 cup sugar in it. Put onto baking sheet and toast. Whip heavy
cream. Top crust with cream cheese, then decoratively place kiwis,
raspberry sauce, and pecans and top with whipped cream and raspberries.
