Cranberry Almond Biscotti

Ingredients: 2
c
Flour 1
t
Baking soda 1/4
ts
Salt
Beat together: 2
Eggs 2
Egg whites 1
t
Vanilla -- or almond
Extract
Add : 1
c
Sugar -- beat well
Add: 1/2
c
Dried cranberries 1/2
To 3/4 cup
Whole almonds
Directions:
Mix well. Using a spoon form into two flat logs, 2-3" wide and about
10" long on a baking sheet sprayed with Pam or equivalent. Bake at
325 degrees for about 40 minutes. Remove from the oven and let them
cool on the sheet for about 10 minutes. Transfer to a cutting board
and slice across the log in 1/2" sections. Return to sprayed baking
sheet and lower oven to 275 degrees. Toast slowly, turning once,
until slightly browned. These will harden up nicely for storage and
definitely need dipping. Next time, I plan to add about a tsp. of
grated orange peel and perhaps some white chocolate chips.
