Chocolate Cinnamon Meringues

Egg whites 1/2

Vanilla 1/4
ts
Cream of tartar 1/4
ts
Cinnamon 2/3

Sugar 2

Unsweetened cocoa powder
Directions:
Spray a nonstick cookie sheet with nonstick cooking spray and set
aside. Combine egg whites, vanilla, cream of tartar in a small mixing
bowl. Beat with an electric mixer on medium speed until soft peaks
form. Stir together cocoa and sugar. Add to egg whes, 1 tablespoon at
a time, beating on high about 5 minutes or till stiff peaks form and
sugar is dissolved. Spoon egg white mixture into a decorating bag
fitted with a large star tip (about 1/2" opening). Pipe 1 1/2" mounds
1 1/2" apart on prepared cookie sheet. Or, drop from a rounded
teaspoon 1 1/2" apart on cookie sheet. Bake in a 325 oven abolut 20
minutes until bottoms are lightly browned and cookies are set. Remove
from cookie sheet, cool on racks.
