Cherry Angel Food Cake

Sifted cake flour 1 1/2

Sugar 12
Egg whites 1 1/2
ts
Cream of tartar 1/4
ts
Salt 1/2
ts
Almond flavoring 1

Vanilla 1/4
c
Chopped maraschino cherries
Whipped cream
Whole maraschino cherries
Directions:
Sift flour and 1/4 cup of the sugar together 3 times. Beat egg
whites with cream of tartar and salt until soft peaks form. Beat in
remaining 1/4 cup of sugar, 2 tablespoons at a time, beating
thoroughly after each addition. Continue beating until stiff peaks
form. Fold in almond flavoring and vanilla. Sift dry ingredients, 2
tablespoons at a time, over beaten egg whites. Fold in gently with a
wire whip. Fold in cherries. Carefully push batter into an ungreased
10 inch tube pan. Bake at 350 degrees for 50 minutes, or until done.
Invert pan; let cool for 1 hour. Just before serving, frost with
whipped cream and decorate with whole cherries. Randy Rigg
