Cheesy Apple Pie

Ingredients:
crust: 1

thinly sliced

cheddar crunch topping: 3/4
c
granulated sugar 3/4
c
all-purpose flour 1/4
t
salt 1/3
c
butter or margarine 1
c
cheddar cheese,
finely shred
Directions:
Recipe by: Midwest Living, October 1994 Preheat oven to 375
degrees. In a mixing bowl, stir together the flour and salt. Cut in
the shortening to the size of small peas. Stir in the cheese. Sprinkle
1 tablespoon water over part of the mixture; toss with a fork. Repeat
until all is moistened. Form the dough into a ball. On a lightly
floured surface, roll out the dough to form a 12-inch circle. Ease the
crust into a 9-inch pie plate. Trim to 1/2 inch beyond the edge of the
plate; fold under the pastry. Finish the edge; do not prick the pastry.
In a bowl, combine the apples, sugar, flour, cinnamon and salt. Transfer
to the crust. For the topping, stir together the sugar, flour and
salt. Cut in the butter until the mixture is crumble. Gently stir in the
cheddar cheese. Sprinkle over the filling. Cover the edge with foil.
Bake for 25 minutes. Remove the foil and bake for 20 to 25 minutes
longer, or until the top is golden and the fruit is tender. Penny Halsey
