Carol's and Aunt Josie's Pecan Pie

Ingredients: 3
large
eggs,
lightly beaten
1/2
cup
light corn syrup,
Karo
1/2
cup
dark corn syrup,
Karo
1/2
cup
sugar 1/2
cup
packed light brown sugar 1
tablespoon
rum,
Myer's (Dark Jamaican rum)
2
tablespoons
butter or margarine,
melted
1
tsp
vanilla 1 1/2
cups
pecans 1
pie crust (9 inch),
unbaked
Directions: 1.
Heat oven to 350F.

Combine eggs, syrup, sugar, margarine, vanilla till well blended.

Stir in pecans.

Pour into pie crust.

Bake in 350 oven 50 to 55 minutes or until knife inserted halfway between center and edge of pie comes out clean. Wrap foil around rim of pie crust for first 35 minutes to keep crust from overbrowning. Cool.
Carol's (Aunt Josie's) Pecan Pie because the Karo syrup company stole her Aunt Josie's recipe. She simply uses the one on their bottle (Carol prefers a mixture of the light and dark syrups). Her other modification is adding a tablespoon of Myers rum and using half granulated, half brown sugar (the recipe calls for just sugar ). Naturally, her aunt made her own crust, but Carol cheats with the Pillsbury ready-made and ready-rolled version.
