Directions:
INSTRUCTINS FOR CRUST
: Preheat oven to 275 degrees. Butter bottom of 9 1/2-inch springform
pan. Dust with a mixture of :
: 1/2 cups grahm cracker crumbs
: 1 Tbsp sugar
: 1/4 tspn cinnamon
: 1/4 tspn nutmeg
INSTRUCTIONS FOR FILLING:
Set aside and prepare filling:
: 5 EA eggs
: 2 EA 8 oz pkg cream cheese
: 1 cups sour cream
: 2 tbsp flour
: 1 tspn vanilla
: 1 cups sugar
Separate eggs and beat yolks until lemon colored then add sugar
gradually. Cut soft cream cheese into tiny chunks and add to egg
mixture. Beat until smooth. Add sour cream, flour and vanila. Beat
again until smooth. Beat egg whites until stiff but not dry. Gently
fold egg whites into cheese mixture. Pour into prepared pan. Bake 70
minutes. Turn off oven and leave in oven 1 hour longer without
opening oven door.
INSTRUCTIONS FOR GLAZE:
Top with following cherry glaze when cool:
: 1 can red tart pitted cherries
: 1/2 cups sugar
: 2 tbsp corn starch
: 1 Dash Red food coloring
Drain the cherries and reserve the liquid. Add enough water to juice
to equal 1 cup. Combine with sugar and corn starch in small saucepan.
Cook until mixture thickens, stirring constantly. Boil 1 minute.
Remove from heat. Stir in cherries and a dash of food coloring. When
cooled, spread over cake. [end]
