Ingredients: 2 1/4
c
cooked dried apricots 1/2
c
sugar 1
tb
grated orange rind 2
egg whites
baked spry pie shell,
* see
1/2
c
heavy cream,
whipped
confectioner's sugar 1/4
t
vanilla
Directions:
Woody -- This doesn't sound exactly like what you want, but I found
the recipe in an old Spry cookbooklet I got at a yard sale many years
ago. Cut apricots to small pieces. Combine sugar and orange rind and
mix with apricots. Beat egg whites until stiff and fold into apricot
mixture, blending well. Pour into baked pie shell. Bake in moderately
hot oven (375 degrees) for 30 minutes. Serve cold, topped with whipped
cream to which sugar and vanilla have been added. James Faunce MGFX39A
