Apricot-Mince Pie

Ingredients:
    pastry for 9" two-crust pie, (see
1  cup  dried apricots
1  tablespoon  sugar
1  jar  mincemeat (about 3 cups), (27 ounces)

Directions:
Heat oven to 425 degrees. Prepare pastry. Mix apricots and sugar in 1-1/2 qt saucepan. Add just enough water to cover apricots. Heat to boiling over medium heat; reduce heat. Simmer uncovered 15-20 minutes or until apricots are tender; drain. Place apricots in pastry-lined plate. Spread with mincemeat. Cover with top crust that has slits cut in it; seal and flute. Cover edge with 2-3" strip of aluminum foil to prevent excessive browning; remove foil during last 15 minutes of baking. Bake 35-40 minutes or until crust is brown. Serve warm.
