Apple Turtle Cheese Cake

Ingredients:

-----NUT CRUMB CRUST-----
3/4  cup  Chocolate graham cracker crumbs
3/4  cup  Graham cracker crumbs
1/4  cup  Sugar
1/2  cup  Fine chopped nuts, pecans, walnuts, and/or almonds
1/4  cup  Melted butter

-----CHEESE CAKE-----
24  ounces  Cream cheese, softened
1  cup  Sugar
2    Egg
2  teaspoons  Vanilla
1  cup  Sour cream

-----APPLE FILLING-----
2/3  cup  Sugar
1  teaspoon  Cinnamon
2  dashes  Nutmeg
2  tablespoons  Flour
2  cups  Peeled/sliced tart apples

-----TOPPING-----
14    Candies
1  tablespoon  Water
1/3  cup  Salted nuts (pecans/-cashews/almonds) chopped
1/3  cup  Chocolate chips
1  teaspoon  Solid shortening
    Rollo candies

Directions:
1. CRUST: In a bowl, mix together the crumbs, nuts and sugar. Stir in the melted butter until well blended. Pat into a 9 inch springform pan.

2. For cheese cake: Beat the cream cheese and sugar. Blend in eggs, vanilla and sour cream. For filling: Combine sugar, cinnamon, nutmeg and flour. Toss with apples. Pour half in concentric circles over cream cheese layer. Pour half of the remaining cream cheese over apples, arrange remaining 1 cup apples over cheese layer and top with remaining cream cheese mixture. Bake in preheated 350 degree oven for 1 hour or until cake tester or toothpick inserted in center comes out clean. Allow cheese cake to cool at room temperature for at least 1 hour. Refrigerate for at least 4 hours or preferably overnight until it is completely cold. Arrange nuts on top of cheese cake. Heat caramels and water in a pan or microwave oven. Stir periodically until well blended, no more than 2 minutes. Cool and drizzle over top. Decorate with rollos.
