Apple Pie Bars

peeled tart cooking apples sliced thinly 1

apple juice,

all-purpose flour 1
cup
sugar 1
teaspoon
baking powder 1
cup
butter,
softened

eggs,
slightly beaten
Directions:
FOR FILLING: In a large saucepan, combine apples, apple juice, cinnamon
and nutmeg. Cook over medium high heat until boiling, stirring
occasionally. Combine cornstarch and the 1/2 cup sugar. Stir into boiling
mixture, cook and stir until thickened and bubbly. Remove from heat; cool
slightly.
FOR CRUST: In a large mixer bowl stir together flour, the 1 cup sugar,
baking powder and 1/4 teaspoon salt. Add butter and eggs. Beat on low
speed until mixture is blended and crumbly. Press 2/3 of crumb mixture (3
1/2 cups) into a greased 15 x 10 x 1 inch pan. Spread apple mixture
evenly over crust. Sprinkle remaining crumbs over apples. Bake at 375
degrees for 25 to 30 minutes or until golden brown. Cool, cut into bars.
