Jack Daniel's Pear and Caramel Cobbler

Ingredients:
4  cups  pears, peeled and diced
3  teaspoons  fresh ginger, peeled and minced
1  tablespoon  Jack Daniel's Tennessee Whiskey
1/4  cup  light brown sugar

Topping
1/2  teaspoon  fresh ginger, peeled and minced
1/4  cup  granulated sugar
1/4  cup  light brown sugar
4  tablespoons  butter
1/4  cup  pecans
1/4  teaspoon  allspice

Batter
1/4  cup  granulated sugar
8  tablespoons  butter
1    egg
1 1/2  cups  unbleached flour
1  teaspoon  baking soda
1/2  cup  buttermilk

Jack Daniel's Whip Cream
1/2  pint  heavy cream
1  tablespoon  Jack Daniel's Tennessee Whiskey
2  tablespoons  sour cream
2  tablespoons  granulated sugar

Directions:
1. Preheat oven to 350 degrees F. Butter 6 custard cups.

2. In a medium bowl, stir together the pears, fresh ginger, Jack Daniel's, and light brown sugar. Set aside.

3. Topping: In a mixer, combine remaining fresh ginger, granulated sugar, light brown sugar, butter, pecans, and allspice in mixer bowl. Blend until crumbly. Set aside.

4. Batter: In a mixer, cream granulated sugar and butter until fluffy. Mix in the egg. Sift together the flour and baking soda; stir alternately with the buttermilk into the creamed butter and sugar. Spoon batter evenly divided into the custard cups.

5. Divide and spoon the fruit and juices over the batter in the cups. Finally, sprinkle on the topping. Bake for 30 minutes on a baking sheet to catch any juices. Cool 10 minutes and remove from the cups. Serve warm with Jack Daniel's Whip Cream.

6. Jack Daniel's Whip Cream: Whip heavy cream, Jack Daniel's, sour cream, and granulated sugar until soft peaks form.
