Honey Cinnamon Pumpkin Pie

Ingredients:
3  cups  pumpkin
3    egg whites, whipped
2  cups  skim milk, at room temperature
1/2  cup  honey
2  tablespoons  honey
1/4  cup  applesauce, at room temperature
2  tablespoons  vanilla
4  slices  bread, diced
3  tablespoons  unbleached flour
2  teaspoons  cinnamon

Directions:
Preheat oven at 350. Prepare 2-9" pie pans with cooking spray and flour. In a mixing bowl, combine pumpkin, egg whites, milk, honey, applesauce, and vanilla. In another mixing bowl, combine bread, flour, and cinnamon. Mix wet ingredients with dry ingredients just until moistened. Pour into prepared pie pans. Bake 40 to 50 minutes.
