Country Oven-Fried Chicken

Author/Submitted by:
Servings: 6
Categories: Chicken / Haven't Tried / Low-Carb / Main Dish

Ingredients:
1/3  cup  butter or margarine
1/3  cup  all-purpose flour
3/4  teaspoon  salt
1/2  teaspoon  pepper
1/4  teaspoon  thyme
1/4  teaspoon  rosemary, crushed
1/4  teaspoon  paprika
2 1/2  pounds  chicken, cut into 8 pieces (2 1/2 to 3 1/2)

Directions:
Heat oven to 375F. In 13x9-inch baking pan melt butter in oven. Meanwhile, combine remaining ingredients except chicken. Dip chicken in melted butter, then coat with flour mixture. In same pan place chicken, skin side down. Bake, uncovered, for 25 to 30 minutes; turn chicken over. Continue baking for 30 to 35 minutes or until fork tender and thoroughly cooked.

If you combine the flour mixture in a sturdy paper bag, add one piece of chicken at a time and shake, it makes coating the chicken quick, easy and thorough! Low-Carb: 6 grams of carbs per serving. Reduce flour or use a low-carb flour substitute to decrease carbs.
