F. Sift together flour, cocoa, baking powder, and salt. In electric
mixer bowl, cream margarine, peanut butter, and vanilla. Stir in egg
substitute, orange juice, and fructose. Blend in flour mixture and
raisins. Dough will be soft. Flour hands lightly before rolling
cookies into balls. (If dough is too soft to handle, refrigerate it
for about 1 hour.)
Roll 1 Tbs dough between hands, to form balls. Set cookies 1 1/2
inches apart on ungreased, non-stick cookie sheet. Flatten cookies
using fork.
Bake 12 to 15 mins. Cookies will begin to brown on bottom and turn a
light golden color on top. They will be firm to touch when done. Cool
on wire rack. Store in airtight container. These cookies store well
and are more flavorful the second day.
