Chocolate Orange Pie

Ingredients:
6  oz  orange juice concentrate
1  c  low-fat cottage cheese
1/4  c  skim milk
1  tb  vanilla extract
3  tb  plain cocoa
1  t  cornstarch
5  tb  granulated fructose or honey
2    eggs
    graham-cracker pie shell
    or chocolate-cookie shell
    ready-to-fill
    fresh orange, diced
    for garnish (optional)

Directions:
Defrost orange concentrate, but do not dilute. Pour it into a blender or food processor (using the steel blade). Add the cottage cheese, milk, and vanilla. Process until cottage cheese is completely smooth. Add cocoa, cornstarch, and fructose; blend smooth. Add eggs and blend with on-off motions just until smooth; pour into pie shell. Place in a cold oven. Set temperature at 300. Bake undisturbed for 1 hour 10 minutes. Turn off oven. Leave pie in the oven, with the door slightly ajar, for 1 additional hour, or until cool. Transfer pie to the refrigerator and chill thoroughly. To serve: cut pie in 10 wedges.
