Cherry Yogurt Cheesecake

Ingredients:
2  cups  plain lowfat yogurt
1  cup  chocolate wafer cookie crumbs
2  tablespoons  butter or margarine, melted
3  packets  sugar substitute
3  tablespoons  orange juice
1  envelope  unflavored gelatin
2  cups  Cool Whip Lite, thawed
1  teaspoon  grated orange peel
2  cups  sweet cherries, fresh Northwest, pitted

Directions:
Drain yogurt in strainer lined with coffee filter 6 hours or overnight. Combine cookie crumbs and butter; press into 9-inch springform pan. Set aside. Discard liquid from yogurt; stir in sugar substitute. Combine orange juice and gelatin; heat until gelatin dissolves. Stir into yogurt mixture. Fold in dessert topping and orange peel. Arrange cherries over bottom of crust. Pour yogurt mixture over cherries. Refrigerate until set.

A lowfat cheesecake with all the flavor of the original. Be sure to buy yogurt that does not contain added gelatin. To lower the fat content even more, use nonfat plain yogurt.
